“Here come the white wings!” This was the children’s cry as they watched the seagulls fly over the vineyard. Vermentino is the main white grape variety cultivated in Sardinia. It is presumed to have Spanish origins, but has found its ideal setting on the island, where it can fully express its special characteristics.
Harvest: Selected grape clusters
Vinification: Cold – maceration followed by fermentation at a controlled temperature for 15 days
Visual exam: Straw yellow with green highlights
Olfactory examination: Fine, elegant aroma with hints of yellow fruits
Gustatory examination : Fresh and sapid, with a faint, bitter almond finish
Pairings: Perfect as an aperitif, an elegant accompaniment to fish, shelfish, and white meats
