“For many, it is the emblematic label of the appellation and the grape variety. It is born from the selection of grapes from three vineyards in Mezzolombardo. According to Emilio Zierock, son of Elisabetta Foradori, in 2009, there was a perception of the awareness of the biodynamic conversion process in the vineyard, which had started in the early 2000s. It opens with notes of hazelnuts, earth, and undergrowth, with a sweet fruit peeking through. As it breathes, the sense of smell surprises with its mobility. It evolves between a Mediterranean character of olive paste, brine, and aromatic herbs, and a vital structure, characterized by warmth and freshness, with clear acidity free from heaviness.”
