100% Schioppettino. The wine is characterized by red fruit notes, cherry and watermelon, with a spicy undertone of pepper and licorice.
The vineyard is located southeast on the hills of Prepotto, in the province of Udine, and consists of vines that are approximately 30 years old. The soil is “Ponca.”
Winemaking process: The grapes are fermented in stainless steel tanks with a submerged cap, meaning that the solid parts brought to the top of the tank by the release of carbon dioxide are kept immersed in the fermenting must using a net fixed at the halfway point of the tank. This is done to promote gentle extraction of anthocyanins, polyphenols, and tannins. Fermentation is carried out with indigenous yeasts, and the wine is matured in stainless steel tanks on its own lees.
