The latest creation from the Depperu winery—but as often happens, the last shall be first. In fact, Paolo Depperu, the founder of the company, was not content with the already excellent quality of the classic Ruinas. He wanted to create an even more distinguished wine, with more intense flavors and structure. Thus, in 2018, a wine was born: a deep straw-yellow, almost golden in color, with remarkable aromatic complexity and a velvety, enveloping taste.
Several factors contribute to achieving a wine with these characteristics: first and foremost, the age of the vines, which are over 40 years old; a very low yield per hectare, around 3.5–4 tons; along with a meticulous selection of the grapes and an extended period of skin contact during maceration. It is vinified exclusively in stainless steel and undergoes further bottle aging for several months.
This is a versatile wine, suitable for pairing with refined seafood dishes, white meats, and both semi-aged and aged cheeses. Its unique character also makes it perfect as a wine for meditation.
