Squisito Cured Meats
Squisito is a small workshop in Diolo di Soragna where they produce everything that pork can offer. The artisanal processing strictly follows the guidelines of the Consortium, and the curing takes place in humid and ventilated cellars, typical of the lower Parma area, where it develops unmistakable flavors and aromas. Careful salting and long natural aging in the cellar give the Fiocco di Prosciutto a sweet and delicate taste.

Sangiovese di Romagna Superiore DOC “Le Papesse” 2021 by Villa Papiano
“Le Papesse” is a splendid expression of a mountain Sangiovese. It is vinified in a blend with a small addition of two ancient local native grape varieties, Balsamina and Negretto, with spontaneous fermentation and the use of only indigenous yeasts. It has a brilliant ruby red color, with a delicate and subtle olfactory profile, featuring violet scents, cherry aromas, and small red berry fruits. The taste is elegant and smooth, with a juicy mid-palate characterized by velvety tannins. The finish is persistent, fresh, and mineral.
