Testun Ciuc al Barolo DOCG is aged for 140 days in tuff cellars on wooden boards. Once optimal aging is reached, it is refined under Nebbiolo and Barolo DOCG red grape pomace, and after about a month of refining, the Testun absorbs the fragrance, color, scent, and taste of the wine. The La Bottera dairy produces traditional cheeses from the Cuneo valleys, made according to tradition.
Tartufaccia green sauce with black truffle from ToscBosco, specializing in the selection and sale of fresh truffles, is also a producer of specialty products and preserves with truffle. The goal is to value everything that naturally grows spontaneously and, therefore, cannot and should not be reproduced—the fragrances, sensations, and flavors the forest gives.
Even in the mini Panettone from Antica Pasticceria Muzzi, they have been using sourdough for over 80 years. Made according to tradition, the panettone is crafted over about 50 hours, giving us a soft cake where the aroma of butter mixes with that of candied citrus peels, along with hints of baking.
