After the death of his father, Maxime Ponson took over the production of the family maison and embarked on a lengthy process of converting the vineyards to organic and environmentally friendly agriculture. The wines produced here are highly personalized, focusing on finesse and envelopment. This Champagne is made from the region’s three grape varieties, with a significant majority of Pinot Meunier, accounting for about 70% of the blend. Pinot Noir and Chardonnay complete the blend in almost equal proportions. The vineyards are located in the Premier Cru villages of Chamery, Vrigny, and Coulommes-la-Montagne.
In the cellar, the wine begins with a long phase of alcoholic fermentation of the base wines, partly carried out in steel tanks and partly in oak barrels. Subsequently, the wine follows the standard winemaking rules according to the Champenoise method. A portion of reserve wine, derived from old historical vintages of the Maison, is then added, and the wine rests on its lees in the bottle for at least 48 months.
It is characterized by a nose rich in yellow fruits, Golden apple, and tropical fruit. The palate is balanced and mature, subtle, delicate, and fresh, thanks to the noticeable acidity that accompanies the finish, making the taste remarkably persistent. An incredible quality-to-price ratio.
